There's nothing more comfy cozy than sleeping off an 18 hour flight by plopping yourself on the floor futon with with windows wide open, on the 20th floor of HDB housing in Toa Payoh on an 82F degree muggy Singaporean night. Aaaaaaaaaaah. All the better to wake up and eat Roti Prata at Casuarina Curry! This greasy finger food breakfast delight wows you with bold curry flavor in a delicate package. Handmade to perfection, the roti are slapped, spread and folded right before your eyes before being flash fried. Both inside and outside are deceptively delicate. Don't let the grease on your fingers fool you. Tearing off a bite sized piece is like pulling cray paper. Dipping the roti into a plate of loose curry coats it with just the right amount of spicy warmth. The crispy outside is taken over by the soft velvety inside and it melts on your tongue as your eyes roll back in your head.
Too delicate you say? Then grab a fork, turn to the next curry platter and just try to lance a piece of mutton. Can't? Better use your spoon then because the pressure cooked tenderness of this meat could be eaten by a toothless baby. The curry's on the table had an assertiveness with the charm of a gentleman. They held the door of your taste buds open just long enough for you to walk through and thank them before nicely giving way to a sip of tea tarek, also known by ang mohs as "pulled tea." The mulled spice flavor of the Indian tea is made rich with sweetened condensed milk. Delicate as it was, the roti was never overpowered but accentuated with subtle tang. In a word, SHWING!
